Un secondo semplice da preparare e anche molto salutare, ricco di omega 3 grazie al pesce e anche di vitamine grazie alle verdure. “Per una buona riuscita del piatto – raccomanda lo chef Bruni – la differenza la fa l’ingrediente primario, la spigola. Qui al Siesta al Mare il pesce è di provenienza del mare Adriatico e solo pesce fresco”. La cottura al cartoccio ha in sé molti vantaggi in quanto preserva al massimo le sostanze nutritive contenute negli alimenti esaltando allo stesso tempo i sapori e i profumi del piatto. Essa viene realizzata unendo insieme due cotture: quella al vapore e quella al forno. Lavare bene la spigola e togliere accuratamente le squame. Poi pulire le patate, sbucciarle e tagliarle a pezzettini, così come i pomodorini. Tritare bene l’alloro, il rosmarino e l’aglio.

Fase 2
Prendere la carta da alluminio e avvolgerla intorno alla spigola con patate, pomodorini e il trito di alloro, aglio e rosmarino. Ma prima di chiudere il cartoccio insaporire il pesce con peperoncino, sale, pepe, aglio, cognac, olio extravergine d’oliva e vino bianco.

Fase 3
Chiudere il pesce, le patate e i sapori con la carta di alluminio, quindi formare un cartoccio, e infornare a 200° per 25 minuti. Finita la cottura servire con tutto il cartoccio.
