Aperto sia a pranzo che a cena, “Da Giò” propone un ventaglio di offerte molto ampio, come ad esempio il “Menù degustazioni antipasti” a partire da 10 euro, il “Menù degustazione pranzo” a partire da 12 euro, “Menù degustazione dello chef” a partire da 25 euro. Oggi per la Rubrica You Food lo chef Giò Malong cucina un antipasto caldo, semplice e veloce: “Sformatino di cicoria con cozze fritte”. Una ricetta buonissima ma soprattutto da lui inventata. Infatti, la particolarità della cucina del ristorante “Da Giò” sta nel creare piatti sempre nuovi, la scorsa volta lo chef aveva preparato la ricetta degli spaghetti sabbia e cozze, e quella di oggi è un altro suo inedito piatto. Un abbinamento squisito tra la cicoria, dal sapore leggermente amarognolo, e la dolcezza delle cozze che vengono prima infarinate e poi fritte, una vera e propria prelibatezza. Infine, lo chef consiglia anche di aggiungere delle fette di pomodoro per decorare il piatto e renderlo anche più colorato. Mettere a bollire l’acqua, poi durante la fase di ebollizione versare la cicoria per un tempo di cottura di circa 6/7 minuti e infine scolarla. Quando è pronta la cicoria farla saltare in padella con un filo d’olio, aglio in camicia, peperoncino, un pizzico di sale per circa 2 minuti.

Fase 2
Nel frattempo prendere sei cozze grandi e aprirle con il coltello. Quindi infarinarle, passarle nel setaccio per togliere la farina in eccesso e poi friggerle in abbondante olio di semi per circa 40 secondi a 178°. Non fatele friggere troppo perché poi si induriscono mentre in soli 40 secondi si cuociono rimanendo belle croccanti. Asciugarle in carta paglia.

Fase 3
Scolare bene la cicoria togliendo accuratamente tutta l’acqua. Metterla in uno stampino e con le mani schiacciarla. Quindi impiattare la cicoria capovolgendo lo stampino e toglierlo. Infine decorare il piatto con cozze fritte e fette di pomodoro.
