Il Ristorante “Da Giò Malong”, in via Ferri a San Benedetto, non finisce mai di stupire i suoi clienti e oggi stupisce anche noi della Rubrica You Food con una ricetta originale. Un primo piatto di pesce dal nome “Spaghetto cozze e sabbia” davvero ottimo, saporito, caratterizzato dai tipici prodotti mediterranei: pomodoro, cozze, olio extravergine d’oliva, rosmarino, prezzemolo. A preparare il piatto di oggi ci pensa lo chef Giacchino, soprannominato “Giò Malong”, nonché il ristoratore del locale. Una ricetta assolutamente da provare, un modo alternativo di preparare gli spaghetti con le cozze, un classico della cucina italiana, che qui “Da Giò” viene cucinato con l’aggiunta di spezie e pangrattato. Assaporate questo piatto lentamente e lasciatevi trasportare dalle papille gustative in un altro mondo fatto di sapori, quelli del mare e della terra, alla scoperta dei piaceri gastronomici locali. Nel ristorante “Da Giò” i mitili provengono esclusivamente dal Mar Adriatico: “La differenza con le altre cozze, ad esempio quelle spagnole – spiega lo chef Gioacchino – risalta subito agli occhi e al gusto: i mitili spagnoli sono molto più grandi ed insapore”. Un’altra caratteristica di questo primo piatto è la cottura che lo chef chiama “cruda”, ovvero non c’è bisogno di fare un soffritto bensì i prodotti sono messi tutti insieme in padella cotti per pochi minuti (circa 5 minuti). Preparare due salse che serviranno per condire la pasta, ribattezzati dallo chef la “sabbia” e la “salsa magica”. La sabbia è fatta di pangrattato, pepe, peperoncino, rosmarino e un mestolo di acqua. La salsa magica, invece, è una crema di prezzemolo e aglio tritati e olio extravergine d’oliva.

Fase 2
Cucinare in padella 10 cozze con un bel cucchiaio di salsa magica, un pugno di pomodori pachino, pomodori essiccati, un mestolo di passata di pomodoro e una manciata di sabbia. Lasciar cucinare per circa 5 minuti a fuoco medio.

Fase 3
Portare ad ebollizione l’acqua con il sale, buttare gli spaghetti (circa 9 minuti di cottura). Quando lo spaghetto è al dente, si scola e si salta in padella con il composto di cozze e odori. Servire in una pirofila condendolo con un filo d’olio extravergine d’oliva, prezzemolo tritato e un’altra manciata di sabbia.
