Dopo una bella giornata di solleone trascorsa al mare, allo chalet Ragno Verde è possibile rilassarsi, gustare e anche assaggiare piatti originali inventati della chef Vincenzo Ricci. Oggi, solo per You Food, Ricci prepara la ricetta del secondo “Salsiccia di Tonno”, una sua creazione, molto particolare perché assaggiandola ricorda il sapore della carne, ma invece è pesce. In cucina con Ricci c’è un altro chef, o meglio aspirante chef, Riccardo Mandolini, studente disabile che da circa due anni svolge il tirocinio presso lo chalet Ragno Verde. Quest’anno Mandolini andrà a frequentare il quarto anno della Scuola alberghiera e il ragazzo ha già le idee chiare: . E la maestria in cucina il giovane studente l’ha già dimostrata perché è lui insieme a Ricci a preparare la ricetta del giorno. Tritare un chilo di tonno, il parmigiano o pecorino, un pizzico di sale, il prezzemolo, il pepe nero, il pepe rosso nel tritacarne oppure tagliare con il coltello.

Fase 2
Mettere l’impasto in una ciotola con la mollica di pane, il prezzemolo e vino rosso q.b.; impastare e amalgamare con le mani. Lasciare riposare per almeno due ore.

Fase 3
Attaccare il budello per salsiccia all’imbuto e insaccare il preparato di tonno formando appunto una salsiccia. Annodare con spago da cucina. Infine cucinare la salsiccia di tonno o in piastra o al barbecue per qualche minuto (3 o 4 minuti per lato). Impiattare con una bruschetta di pane e un filo di olio extravergine d’oliva.
