A preparare la pietanza del giorno, gli chef Vincenzo Ricci, Adele Ricci e Rosalba Bollettini, dello chalet Ragno Verde, situato lungo viale Alcide De Gasperi, a Grottammare. Qui da Ragno Verde il guazzetto lo sanno fare in maniere eccezionale, di una bontà assoluta, perché il segreto sta prima di tutto, come spiegato dal cuoco Vincenzo Ricci, “nella qualità e freschezza del pesce. Noi usiamo il pescato del giorno, freschissimo e proveniente dal mare Adriatico”. Il pesce più usato per questo piatto sono le trigliette, mazzoline, scorfanetti, seppioline, codine di rospo, busbana, razzette, rombetti, pannocchia bianca. Una ricetta veloce da preparare ma anche molto buona e salutare, in quanto ricca di omega 3. Ci vuole solo un po’ di pazienza per lavare ed eviscerare il pesce fresco. Fare un soffritto di olio extravergine d’oliva, cipolla tritata, aglio, pepe, peperoncino. Quindi aggiungere prima i molluschi perché ci impiegano più tempo per cuocersi. Dopo qualche minuto aggiungere il restante pesce e infine unire i pomodorini tagliati a pezzetti e il prezzemolo tritato. Sfumare il tutto con un bicchiere di vino bianco. Cucinare a fuoco medio/basso per 15 minuti.
