Preparazione crema: far sciogliere in un pentolino il burro aggiungendo della farina per 1 minuto. Nel frattempo portare ad ebollizione un litro di latte e aggiungerlo al burro e farina. Cuocere per circa 2/3 minuti a fuoco basso. A questo punto, una volta realizzata la crema far sciogliere lo zafferano.

Fase 2
Cuocere i ravioli in abbondante acqua salata. Quindi scolarli e  saltarli in padella con la crema.

Fase 3
Lavare e tagliare a striscioline sottili le zucchine, cuocerle in padella con un filo d’olio extravergine d’oliva spadellandole spesso per qualche minuto.  Infine decorare i ravioli con la crema di zafferano e sopra le zucchine alla julienne.

Et voilà il piatto è pronto per essere servito.
