Preparare la salsa: tagliare a pezzi non troppo piccoli i peperoncini, poi soffriggerli a fuoco lento insieme al sale e all’olio d’oliva. Una volta appassiti i peperoncini, continuare la cottura a fuoco più vivace girandoli continuamente. I peperoncini devono cuocersi nell’olio, ma non fateli arrostire o friggere troppo, poiché devono mantenersi morbidi. Quando si sarà formata una marmellata oleosa, con i pezzetti di peperoncino integri, versatela ancora bollente nei vasetti di vetro, chiuderli, e poi posizionarli a testa in giù per formare il sottovuoto.

Preparare il panino: per prima cosa grigliare il peperone e le salsicce. Quindi tagliare in due il pane e iniziare a farcire.
