In cucina lo chef Matteo D’Angelo che oggi ci presenta un secondo piatto dal nome “Bocconcini di vitello ai porcini e mirtilli”. Il ristorante offre sempre piatti appetitosi, originali accompagnati da vini pregiati del territorio. L’ambiente è confortevole e ricorda, appunto, le antiche osterie di una volta caratterizzate da interni in legno. Sul menu sempre piatti diversi che cambiano settimanalmente. Tornando alla ricetta del giorno, la bontà di questo piatto sono molteplici, non solo la carne di vitello di provenienza marchigiana, ma anche l’abbinamento con i porcini e i mirtilli che rendono il suo sapore unico e inconfondibile. E ora qualche curiosità sui mirtilli: i mirtilli generalmente crescono nelle zone montane, sulle Alpi e gli Appennini, nei boschi e ha tradizioni antiche, spesso utilizzato per curare diverse patologie. Secondo alcune recenti ricerche statunitensi, le piccole bacche sarebbero dotate di un enorme quantitativo di sostanze antiossidanti, in grado di prevenire patologie cardiovascolari, proteggere dai tumori e addirittura ritardare il naturale processo di invecchiamento. Salare la polpa di vitello tagliata a pezzettini, infarinare e saltarlo in padella con olio extravergine d’oliva a fuoco vivo. Poi lasciarlo riposare.

Fase 2
Fare un soffritto con cipolla, carota e sedano tritati e sfumare con 100 ml di vino bianco. Lasciare evaporare il vino bianco. A questo punto, bisogna aggiungere mezzo litro d’acqua, sale e i porcini. Portare a ebollizione.

Fase 3
La salsa preparata nella fase 2 va versata in una teglia con la carne di vitello e poi cotto al forno (150° per 1 ora e mezza). La carne assorbe l’acqua e la farina addensa la salsa. Una volta cotto, il vitello va impiattato decorandolo con mirtilli e rucola.
