Rombo arrosto con melanzane stufate

Una ricetta facile e veloce da preparare ma di una bontà unica e soprattutto un bel piatto da presentare. Al ristorante Messer Chichibio, situato lungo viale Rinascimento a San Benedetto, le ricette sono studiate ad hoc per far conoscere la cucina marchigiana in tutta la sua completezza, soprattutto paesaggistica: vini, formaggi, olio, pesce, carne nostrana. Insomma, le ricette sono pensate e studiate per elevare i sapori della tradizione unite ad una cucina all´altezza dei più grandi chef. Con oltre vent’anni di esperienza, il cuoco e ristoratore Piero Crescenzi insieme al suo socio Gino Bollettini, hanno reso grande questo ristorante e il motivo è principalmente la qualità dei suoi prodotti. Il rombo, che deve il suo nome alla sua forma romboidale, geometricamente perfetta, è un alimento molto ricco di sali minerali (soprattutto calcio e fosforo), proteine nobili e pochi grassi, prevalentemente insaturi. Le carni del rombo, inoltre, sono delicate e digeribili. Tagliare una fetta di rombo senza togliere la pelle, insaporirlo con sale, olio d’oliva, pepe e aglio. A questo punto va impanato con delle semplici molliche di pane con aglio, prezzemolo, rosmarino e soprattutto il pane deve essere rigorosamente raffermo. Mettere il rombo in una padella bollente con un filo d’olio scottandolo dalla parte della pelle senza girarlo, per pochissimi minuti.

Fase 2
Preparare le melanzane stufate: mettere in una pentola, tutto a crudo, le melanzane tagliate a cubetti, qualche pomodorino tagliato a pezzettini, uno spicchio d’aglio intero, un rametto di rosmarino intero, un pizzico di sale, aggiungere un goccio d’acqua e infine coprire con un coperchio.

Fase 3
Nel frattempo che si cuociono le melanzane stufate, mettere il rombo, precedentemente scottato in padella, in forno preriscaldato a 200° per circa 6 minuti. Trascorso il tempo di cottura, il rombo può essere impiattato disponendo prima le melanzane stufate, poi sopra il rombo e infine decorarlo con la buccia di melanzane sfilettata e fritta, e un filo d’olio extravergine d’oliva.
