La tavola calda prepara ogni giorno piatti caldi da mangiare direttamente nel locale oppure d’asporto, come carne, pasta e verdure, per dare il più possibile un’ampia offerta gastronomia, ma soprattutto qui sono rinomati per la pasta all’uovo. In cucina c’è il giovane chef Stefano Lorenz che prepara gli gnocchetti fatti a mano, un primo davvero prelibato, diventato il cavallo di battaglia di “Arte del gusto”. E la ricetta dello chef è quella della nonna, ovvero secondo i canoni della tradizione, con gli ingredienti scrupolosamente selezionati. Infatti la bontà c’è e si sente dal gusto nell’assaggiare questo primo di gnocchetti al buono odore che proviene dalla cucina.
Un piccolo accorgimento: per poter ottenere gnocchi di patate più sodi si possono seguire diversi accorgimenti, che vanno dall’uso di patate appropriate (come ad esempio le patate a pasta gialla di Avezzano oppure la patata rossa di Colfiorito), alla preparazione, dove bisogna avere l’accortezza di impastare la pasta quel poco che basta. Lessare le patate intere con la buccia, poi sbucciarle e schiacciarle con lo schiacciapatate. Infine farle raffreddare.

Fase 2
Unire alle patate schiacciate la farina, la fecola, un uovo, sale, noce moscata e parmigiano. Quindi impastare con le mani finché non si forma una massa compatta e poi far riposare. A questo punto bisogna stendere la massa e formare delle lunghe strisce che andranno tagliate a cubetti, la tipica forma dello gnocco. Gli gnocchi andranno poi lessati e scolati solo quando vengono a galla.

Fase 3
Per il condimento fare un soffritto di radicchio e salsiccia. Rosolare in padella con un filo d’olio extravergine d’oliva la salsiccia e il radicchio tagliato alla julienne. Sfumare il tutto con del vino bianco.  Infine, far saltare gli gnocchi in padella con salsiccia, radicchio e una spolverata di parmigiano.
