In cucina lo chef Filippo Bruni e i pizzaioli nonché gestori, Giuseppe Ciotti e Stefano Spada. Per la ricetta di oggi abbiamo bisogno di un’orata fresca, friarielli e pomodorini pachino. Insomma, prodotti del mare e della terra per un secondo ricco di omega 3 e vitamine. Scopriamo qualcosa di più sui friarielli, un tipo di verdura molto usata nella cucina del Sud Italia, in particolare in quella napoletana, romana e pugliese, ma che in base alla città di provenienza vengono chiamati con nomi diversi. Ad esempio a Roma si dicono broccoletti, in Puglia cime di rapa e in Toscana rapini. I friarielli sono infiorescenze della cima di rapa. In Puglia, inoltre, i friarielli sono costituiti dall’infiorescenza coi fiori ancora chiusi e le foglie piccole e tenere della specie Brassica rapa subsp. Sylvestris. Il modo più frequente per prepararli sono soffritti in padella con olio d’oliva, aglio, sale e poco peperoncino rosso piccante. Scottare in padella con un filo d’olio d’oliva il filetto di orata prima impanato con la farina e un pizzico di sale. Rosolare l’orata per qualche minuto.

Fase 2
Fare un soffritto di cipolla tritata con olio d’oliva. Poi aggiungere i friarielli (precedentemente cotti in padella con peperoncino, aglio e olio) e scaldarli in padella per pochi minuti. Quindi frullarli in un mixer.

Fase 3
Rosolare nuovamente l’orata a fuoco alto con il cognac. Attenzione all’alta fiamma che produce il cognac a contatto con la pentola calda. Una volta placata la fiamma aggiungere i pomodorini tagliati a pezzetti.

Impiattare mettendo prima la salsa di friarielli, poi l’orata con i pomodorini e infine decorare con prezzemolo.
