Importante per la buona riuscita del piatto è scegliere con attenzione il prodotto principale, filetto di manzo di primo taglio, ancora meglio se di provenienza marchigiana. Caratteristiche del pepe verde: tra le diverse qualità di pepe, il pepe verde è considerato il più aromatico ed erbaceo. Il pepe verde, che deriva dal frutto acerbo dell’omonima pianta “Piper nigrum”, fin dall’antichità è stato sfruttato per le sue potenzialità anti-fermentative ed antisettiche usate per la conservazione degli alimenti. Infarinare leggermente entrambi i lati del filetto di manzo. Schiacciare i grani di pepe su un tagliere col dorso di un coltello. Poi in una padella antiaderente di 28 cm, far scaldare il burro, quindi rosolare ad alta temperatura i filetti, circa un minuto per lato. Infine salarli e toglierli dalla pentola.

Fase 2
A questo punto aggiungere nella padella i grani di pepe, sfumare con un po’ di brandy e attendere che evapori (ma fate attenzione perché potrebbe prendere fuoco e quindi procedere cautamente tenendosi bene a distanza dalla pentola). Unire la senape, la panna, il rosmarino e attendere che si addensano.

Fase 3
Aggiungere nuovamente i filetti in padella versando anche l’eventuale sangue che nel frattempo hanno rilasciato, ultimare la cottura da ambo i lati, assaggiare la salsa e regolare di sale.
