A preparare il piatto di oggi è lo chef Maurizio Vagnoni, un esperto nella realizzazione di ricette particolari come quella di oggi, inventata da lui stesso. Gli ingredienti sono ricercati e prelibati: chitarrina di farro, sugo al ragù di melanzane, mandorle e pesto di rucola. Insomma, un mix di sapori della terra e anche un’esplosione di colori. Caratteristici e benefici delle mandorle: è stato confermato da numerose ricerche scientifiche che le mandorle fanno molto bene se mangiate con regolarità, ovvero 3/4 mandorle al giorno. È stato notato, infatti, da numerosi medici che chi le consuma regolarmente ha livelli di colesterolo più bassi e una circolazione migliore. Lavare la melanzana, pulirla togliendo accuratamente il nocciolo. Quindi avvolgerla nella carta stagnola. Poi cuocerla in forno per 120/130° per 40 minuti. Dopodiché spellare la melanzana, frullarla in un mixer con uno spicchio d’aglio, lo scalogno stufato prima in padella, sale, pepe e olio extravergine d’oliva nel mixer.

Fase 2
Preparare il pesto frullando in un mixer la rucola, lo spicchio d’aglio, olio, sale, pepe, parmigiano grattugiato e metà delle mandorle pelate e tostate in padella con sale e olio d’oliva.

Fase 3
Mettere a cuocere le chitarrine in abbondante acqua salata per 5/6 minuti. Lo chef consiglia di utilizzare le chitarrine di farro integrale dell’azienda Marcozzi di Campofilone perché particolarmente adatte a questa ricetta. Una volta pronte, saltarle in padella con il ragù di melanzane.
