Come antipasto ma anche come secondo, le olive all’ascolana non sono mai di troppo a tavola. Qui alla gastronomia “L’Arte del gusto”, situata in viale dello Sport a San Benedetto, le fanno seguendo alla perfezione la tradizione ascolana. Un mix di carni, manzo, pollo e suino, racchiuso dentro un’oliva verde, “naturalmente solo quella coltivata ad Ascoli Piceno – ha spiegato lo chef Lorenz – perché altrimenti l’oliva fritta cambia totalmente sapore”. Ma da “Arte del gusto” è possibile gustare anche ottima pasta all’uovo, secondi, primi e dolci dai sapori squisiti e prelibati.
Curiosità sulle olive all’ascolana: secondo l’ascolano Benedetto Marini la ricetta sarebbe nata nell’anno 1800. Le fonti narrano che furono i cuochi delle grandi famiglie aristocratiche, accordandosi tra loro, ad inventare questa ricetta. Le olive all’ascolana furono ideate come escamotage per consumare le enormi quantità e varietà di carni che avevano a disposizione la nobiltà, dovute alla maggiorazione delle regalie che invece pesavano sui contadini a favore dei loro padroni. Tagliare a pezzi il manzo, il pollo e il suino. Poi fare un soffritto con un filo di olio extravergine d’oliva, sedano, carota e cipolla tagliati a pezzettini. Pronto il soffritto far rosolare insieme ad esso la carne. Sfumare con un po’ di vino bianco poi mettere il coperchio e far cuocere per 40 minuti a fuoco medio. A fine cottura aggiungere il sale. Una volta cotta, la carne va tritata e insaporita con sale, uova, parmigiano, scorza di limone, noce moscata e pepe.

Fase 2
Denocciolare le olive (lo chef raccomanda le olive verdi ascolane), riempirle con la carne e infine impanarle con farina, uova e pangrattato.

Fase 3
Friggerle a 220 gradi con olio di semi di girasole finché non diventano belle dorate.
